{"id":1726,"date":"2018-06-05T04:02:11","date_gmt":"2018-06-05T04:02:11","guid":{"rendered":"http:\/\/www.raccoonstar.com\/?p=1726"},"modified":"2018-06-05T04:02:11","modified_gmt":"2018-06-05T04:02:11","slug":"salted-chocolate-chunk-cookies","status":"publish","type":"post","link":"http:\/\/www.raccoonstar.com\/?p=1726","title":{"rendered":"Salted Chocolate Chunk Cookies"},"content":{"rendered":"<p>Adapted from the <a href=\"https:\/\/cooking.nytimes.com\/recipes\/1019152-salted-chocolate-chunk-shortbread-cookies\">NYT Recipe<\/a><\/p>\n<p>1  cup plus 2 tablespoons\/255 grams total (2\u00bc sticks) salted butter, cold<br \/>\n\u00bd  cup\/101 grams granulated sugar<br \/>\n\u00bc  cup\/55 grams light brown sugar<br \/>\n1  teaspoon vanilla extract<br \/>\n2 \u00bd  cups<br \/>\n6  ouncesbittersweet dark chocolate, chopped (chunks!)<br \/>\n1  large egg, beaten<br \/>\nTurbinado or sanding sugar, for rolling (Turbinado tastes better)<br \/>\nFlaky sea salt, for sprinkling<\/p>\n<p>Preheat oven to 350 (though dough will rest overnight)<\/p>\n<p>1. Stand mixer with paddle, beat butter, sugar, vanilla until light and fluffy.<br \/>\n2. Add flour, then chocolate chunks until just blended.<br \/>\n3. Divide in half, roll into logs and wrap in saran wrap<br \/>\n4. Chill overnight (two hours minimum, but overnight makes it much easier to slice)<br \/>\n5. Brush each log with egg, then roll with turbinado sugar<br \/>\n6. Slice into 1\/2 inch slices, rotating as you go<br \/>\n7. Sprinkle with flakey sea salt<br \/>\n8.
